This homemade version keeps the bright colours and festive spirit, but uses fresh vegetables, fibre-rich fruit and lighter toppings. Give it a try!
1. For the Yu Sheng
Ingredients:
- 2 cups of carrots, thinly shredded
- 2 cups white cabbage, thinly shredded
- 2 cups purple cabbage, thinly shredded
- 2 cups of cucumber, thinly shredded
- 1 cup baked croutons
- ½ cup dried cranberries or raisins
- 2 tbsp chopped peanuts
- 2 tbsp toasted sesame seeds
- 12 slices of mandarin oranges

For the dressing
- ½ cup plum sauce
- 1 tbsp lemon juice
- 4 tbsp water
- 1 tsp cooking oil
- 1 tsp sesame oil
What to do:
- Combine all dressing ingredients and mix them well. Set aside.
- On a large round platter, arrange all the shredded vegetables neatly.
- Sprinkle peanuts, sesame seeds, dried cranberries or raisins and croutons evenly on top.
- Garnish with mandarin orange slices for colour and sweetness.
- Drizzle the dressing over the salad, and you’re ready to toss for good health and prosperity!
