What to do:
- Preheat the oven to 110°C.
- Boil the potato for 20 minutes or until soft.
- Mash the potato thoroughly, then push it through a fine mesh strainer to achieve a smooth texture.
- Cut and peel the dragon fruit, then press it through a fine mesh strainer to collect the juice.
- Add the potato starch to about 30g of dragon fruit juice and water. Mix until smooth.
- Transfer the mixture into a plastic bag or piping bag. Pipe small dots onto parchment paper, leaving space between each one.
- Place a second sheet of parchment paper on top and press gently to flatten the dots into chip shapes.
- Bake for 40 minutes until crisp.
- Remove from the oven and let cool before serving.
