Healthy Yu Sheng Salad
Serves 4 – 6
Carrot, thinly shredded
White Cabbage, thinly shredded
Purple Cabbage, thinly shredded
Cucumber, thinly shredded
Dried cranberries or raisins
Toasted sesame seeds
Combine all ingredients for the dressing, and mix to combine well. Set aside.
In a large round platter, arrange the vegetables neatly.
Sprinkle the peanuts, sesame seeds, dried cranberries or raisins, and croutons evenly over the vegetables. Garnish with the mandarin orange slices.
Drizzle the dressing over the salad, and you are ready to toss for good health!
– For non-vegetarian option, smoked salmon could be added.
